| I choose to eat only plant foods for optimal health. I was vegetarian during college, went back to omnivore, then became vegan a few years ago. Beyond just avoiding animal products, I also minimize/avoid SOFAS (sugar, oil, flour, alcohol, salt). But I am not a purist. I will occasionally eat the cafeteria vegetable soup even though it may contain a bit of dairy. When I cook for friends who don't eat the way I do, I will sometimes add a bit of oil and salt for their taste preference that I would not include only for myself. |

| I plan to work a few more years in my job as an IT specialist at the U.S. Patent and Trademark Office before retiring. I am working on designing and building a permaculture food forest farm where I hope to grow most of the food that I eat. |
